Deconstructed Chilaquiles

Ingredients

Main ingredients:

  • 2 tablespoons vegetable oil

  • 3 flour/corn tortillas (cut into wedges)

  • ½ red onion

  • 1 (7oz) can of red enchilada sauce

  • a pinch of salt

  • 2 – 4 eggs

Suggested toppings: avocado, sour cream, minced red onion, cheese, and lime wedges.

Instructions

Have you ever made something delicious by accident? This was one of those dishes for us! After realizing we didn’t have the proper equipment (or ingredients) on our camping trip to make Chilaquiles correctly, we decided to deconstruct it and enjoy!

1) In a large skillet or on a grilled fry the flour/corn tortillas until crispy in oil. Once they are a light golden brown remove and salt the tortilla wedges.

2) Fry the red onion on medium heat or until soft. Add the enchilada sauce and bring to a boil.

3) One at a time crack the eggs into the red onion/enchilada sauce mixture and cook on a low temperature until the egg whites are cooked through with a runny yolk or desired consistency.

4) Serve the eggs, sauce, and tortilla wedges with your favorite Mexican toppings!
